A true tasting menu is a conversation between the chef, the ingredients, and the guest. At Temaki Sushi, Head Chef Hiroshi curates a seasonal multi-course Omakase that evolves with the rhythms of nature.

This is not about choosing from a list. It is about surrendering to the moment, trusting the process, and experiencing Japanese cuisine in its most pure, intentional form.

Most tasting menus dictate your experience. Ours invites you to co-create it. The centrepiece of our Omakase is an edible canvas—an exquisite platter of 11 hand-roll selections.

From Wasabi Soy Marinated Tuna to Seared A5 Wagyu Beef, you build each roll yourself, guided by your instincts and your appetite. This is sushi reimagined: not just to be eaten, but experienced.

Your Evening, Unfolded

Welcome Sake

Your journey begins with a glass of premium Junmai Daiginjo—a delicate, refined pour from a boutique brewery established in the 1790s.

Seasonal Prelude

A gentle awakening of the palate with our Cucumber Wakame Salad, Konnyaku Jelly with sweet miso, and a comforting bowl of traditional dashi broth.

The Temaki Canvas

The centrepiece. A beautifully composed platter of 11 selections arrives—pristine seafood, A5 Wagyu, and farm vegetables—served with traditional accompaniments like fresh wasabi and yuzu pepper.

The Finale

Warm Somen noodles in rich bonito dashi, followed by our signature Hojicha Pudding with fresh raspberry and sweet adzuki bean.

A tasting menu is only as good as its soil. We don’t just source our ingredients; we grow them at Ferndale, our 35-acre organic farm in the Dandenong Ranges.

Alongside classic Western produce, our soil nurtures authentic Japanese plants: daikon, shiso, wasabi, and yuzu. When you taste our Tofu & Seasonal Vegetables hand roll, you are tasting our farm.

You taste with your eyes and fingertips first. Every dish in our Omakase arrives on handmade ceramics crafted at our Ferndale pottery studio.

Made from clay sourced from Shiga Prefecture, Japan—home to the legendary Six Ancient Kilns—many pieces carry the delicate imprint of native ferns foraged from our forest floor. It is dining elevated to a multi-sensory art form.
