Imported directly from boutique Japanese breweries, our sake selection is chosen to complement Head Chef Hiroshi’s seasonal menu, creating a dialogue between the cuisine and the pour.
The Art of
Rice Polishing
We offer two distinct grades of sake, based on the rice polishing ratio (seimaibuai). The more the rice is polished, the more refined and delicate the flavor becomes—a process requiring decades of mastery.
Our Junmai (40% polished) offers a rich, earthy umami that anchors the meal, while our premium Junmai Daiginjo (60% polished) provides a fragrant, delicate finish that dances across the palate.

We don't select our sake from a catalogue. We seek it out—visiting the breweries, walking the rice fields, and sharing meals with the makers. Every pour at Temaki tells a story of geography, tradition, and human dedication.
One such producer is Aumont Brewery, which has been crafting sake since the 1790s. Their centuries-old techniques, combined with the pristine water of their region, create the unparalleled depth of flavor we are proud to serve.
