Where Every Dish
Begins
At the heart of everything we serve is Ferndale—our 35-acre farm nestled in the misty, lush folds of the Dandenong Ranges. We don't just source ingredients; we grow them.
Whenever possible, we harvest fresh from the soil, trees, and hives of this beautiful land. This is not a trend for us—it is a return to how food is meant to be: slow, seasonal, and grown with intention.
A Dialogue Between
East and West
Our gardens celebrate a harmony of cultures. Alongside classic Western produce, our soil nurtures a wide variety of traditional Japanese plants—bringing authentic flavours directly to your plate.
Japanese Herbs
Shiso, mitsuba, and wasabi leaves grown in shaded, misty beds.
Roots & Radishes
Daikon, turnips, and burdock root, pulled fresh from the earth.
Rare Citrus
Yuzu, sudachi, and kumquats ripening under the Victorian sun.
Heirloom Greens
Seasonal lettuces, mustard greens, and edible flowers.
Wild Honey &
Free-Range Eggs
Our bees produce a light, floral wild honey, harvested with care and used to add subtle sweetness to our dishes. It is a taste unique to the blossoms of the Dandenong Ranges.
Our genuine free-range eggs come from chickens who roam freely across open pasture. The rich, amber yolks are a testament to the life they live—sunlit, natural, and unhurried.
